Someone's in the Kitchen!
First there was "Survivor," then "Amazing Race" - both great reality show fodder for some creative DMC programming. The ACCESS team certainly has had fun with some hilarious adaptations. Then, the "food shows" pretty much took over a good chunk of air time with reality shows such as "Iron Chef," "Top Chef," and "Hell's Kitchen" as well as the Food Network. And...as life imitates art (or reality TV) so came the requests from our clients to incorporate food teambuilding events into their programs - just like on TV. Nutrition is a contemporary focus and culinary skill, especially highlighting creativity and shortcuts, is of great interest to all - so why not have fun with it!
"We've been producing more and more "Iron Chef" style teambuilding events, says ACCESS partner Candace Bisconte, DMCP. "We have turned this TV show into a popular activity for our attendees. The participants really get into it. The format mimics the "Iron Chef" format where teams are presented with secret ingredients and tasked to prepare dishes, but we limit the number of dishes to accommodate our clients' conference time schedules. People love to cook and people love to eat. Everyone wins!" At a recent client event at the Montage Laguna Beach, teams received "recipes" and competed for "best culinary dish" as determined by a judging team, including the hotel chef. May the best chefs win!
America's love affair with celebrities extends to celebrity chefs as well who are often wildly entertaining as speakers and at presentation-style dining functions. San Diego's own "Top Chef," Brian Malarkey, entertained guests with his kitchen antics, upbeat personality, and "angry shrimp" dish at a VIP ACCESS organized event where guests received "Top Chef" cookbooks (signed by Brian) as souvenirs.

The Beer Essentials! They say that craft beer is to San Diego what artisanal wine is to Napa. In fact, "Men's Journal" and other publications have proclaimed San Diego the new beer capital of the US. Within our county's limits there are roughly 35 independently owned and operated breweries and the variety of beers across the city is the most eclectic in the country. Talk to the ACCESS San Diego team about "crafting" a special beer tasting event or a tour of one or more of our local breweries.
With names like "Sublimely Self-Righteous Ale," "Pure Hoppiness," "Shark Attack," and "Sour Wench Blackberry Ale," these specially crafted brews, with their unique ingredients and flavors, put San Diego's indie craft beer makers in a category all their own.

Spice it up with ACCESS
Tres Rios
Great recipe from seafood king, Brian Malarkey ( BRAVO Top Chef, Season 3 finalist), as published in Top Chef, the Quickfire Cookbook. Brian was also named Best Chef, 2009, in San Diego Magazine's annual poll.
Serves 6
Ingredients:
- 1 pound mixed shellfish, such as mussels, clams, scallops, crayfish, shrimp, and lobster, cleaned
- 2 cups dry white wine
- 2 red bell peppers, seeded and cut into thin strips
- Juice of 1 lemon (about 3 tablespoons)
- 2 tablespoons finely diced shallots
- 2 tablespoons unsalted butter
- 2 tablespoons Pernod
- Salt and pepper
- 6 oysters (such as Kumamoto)
- 1 tablespoon red wine vinegar
- 1/2 baguette, sliced on the bias
- 3 farmed conch, cleaned and chopped
- 1 clove garlic
- 1/2 cup olive oil
- 1 handful fresh flat-leaf parsley, chopped
Directions:
Preheat an oven to 375 degrees F.
Place a large pot over medium-high heat and add the shellfish, wine, bell peppers, lemon juice, 1 tablespoon of the shallots, the butter, Pernod, and salt and pepper to taste. Cover and steam until the shellfish open, about 5 minutes. Discard any unopened shells.
Shuck the oysters and arrange on a platter or clean work surface. Combine the remaining 1 tablespoon shallots, the vinegar, and 1/2 teaspoon black pepper and divide evenly over each oyster.
Spread the baguette slices on a baking sheet and toast until golden brown, about 10 minutes. Meanwhile, combine the conch, garlic, olive oil, parsley, and salt and pepper to taste in a blender or food processor and pulse until smooth. Spread on the toast slices and return to the oven for about 5 minutes. Remove from the oven and serve with the poached shellfish and oysters.
